The germination, growth (dry weight of the mycelium, pH and concentration of residual carbohydrates) and the production of aflatoxins in the course of time, in Aspergillus parasiticus strain NRRL 2999 have been studied. The fungus was sown in Yeast extract-Sucrose (YES) medium and incubated for 1, 2, 3 14 and 15 days at 28°C in darkness. After extraction with chloroform and subsequent drying with anhydrous sodium sulphate, the aflatoxins produced were quantified by thin layer chromatography. The results obtained shown that the complete germination of A. parasiticus conidia was reached after an incubation of 28 h. The presence of aflatoxins was detected after 3 days and the curve of toxin production was biphasic with a maximum level at the 7th day (aflatoxin B1: 15 μg/ml of the medium, aflatoxin B2: 0,75 μg/ml, aflatoxin G1: 54 μg/ml, aflatoxin G1: 2,5 μg/ml), and with a new production peak (somewhat lower) by the 9th day.
