11. [Colmar butchers' corporation archive of documents regulating prices and practices.] [1618 - 1783]
- [Colmar] : [Colmar butchers' corporation], [1618-1783, bulk 1712-1783]
- Description
- Archive/Manuscript — 40 documents (2 manuscript, 38 letterpress) ; 22-42 cm
- Summary
-
Archive of 40 documents – many of them in both French and German – from the city of Colmar concerning the regulation of prices and other professional practices among butchers, fishmongers and bakers between the years 1618 and 1783. Taken as a whole, the collection provides information about ingredients of Alsatian cuisine and their changing costs over time. The bulk of the collection consists of letterpress forms printed by the Colmar corporation of butchers for internal use and/or distribution to members; they were intended both to fix minimum prices for various cuts of meat and to remind members of their professional obligations. They include extensive lists of butchers' goods for sale with blank spaces left for filling in the current price for each cut of meat, as well as rules about stall maintenance, allowances for taking unsold meat home for personal use, areas where butchering is licit and illicit, and admonitions against certain practices. In addition, one document pertains to fishmongers, and two pertain to bakers and grain-sellers
